Somehow I didn't notice this question before, opps! Anyhow, activities that "surround" the lesson are regular everyday activities that teachers do that "surround" the lesson (the whole day's class), but are not really related to any particular activity (such as a listening, speaking, or reading activity). So, things like taking attendance, controlling the class, telling the students where to sit, organizing the classroom, etc, are all things that "surround" the lesson, but are not actually part of an activity.
