I have a question for final assignment, making a lesson plan.
Do I have to write down what the teacher will say?
(ex) " Hello, class, today we're going to do..../Let's do the activity which is...."

Good question. When writing your lesson plan you should think of it as a recipe. You should use the imperative form (command form) because we should always keep in mind that when we are creating lesson plans, others may use it. Now, that being said, when you are creating examples, then you can write down what any potential teacher will say like the example you wrote above. A combination of both styles would be best.
